Västerbotten Cheese Pie

Ingredients

  • 180 g all-purpose flour
  • 125 g cold butter, diced
  • 0.5 dl cold water
  • 0.5 tsp fine salt
  • 300 g Västerbotten cheese, finely grated
  • 3 large eggs
  • 2 dl heavy cream
  • 1 dl whole milk
  • 0.5 tsp freshly ground black pepper
  • 1 tbsp chopped chives, optional

Instructions

  1. 1Rub the flour, butter, and salt together until the mixture looks like coarse crumbs.
  2. 2Add the cold water and quickly bring the dough together without overworking it.
  3. 3Press the dough into a 24 cm pie dish, prick the base with a fork, and chill for 20 minutes.
  4. 4Heat the oven to 200°C and blind-bake the crust for 10 minutes.
  5. 5Whisk the eggs, cream, milk, and black pepper in a bowl, then stir in the grated cheese.
  6. 6Pour the filling into the crust and bake for 25–30 minutes until golden and just set in the center.
  7. 7Let the pie rest for at least 10 minutes before slicing.
  8. 8Sprinkle with chives before serving, if using.

  • Use a cheese with strong flavor; it keeps the filling rich without needing extra salt.
  • Bake on a lower oven rack if you want a crisper base.
  • Serve with salad, pickled onions, or a spoonful of sour cream.
