Ingredients

- 180 g all-purpose flour
- 125 g cold butter, diced
- 0.5 dl cold water
- 0.5 tsp fine salt
- 300 g Västerbotten cheese, finely grated
- 3 large eggs
- 2 dl heavy cream
- 1 dl whole milk
- 0.5 tsp freshly ground black pepper
- 1 tbsp chopped chives, optional
Instructions
- 1Rub the flour, butter, and salt together until the mixture looks like coarse crumbs.
- 2Add the cold water and quickly bring the dough together without overworking it.
- 3Press the dough into a 24 cm pie dish, prick the base with a fork, and chill for 20 minutes.
- 4Heat the oven to 200°C and blind-bake the crust for 10 minutes.
- 5Whisk the eggs, cream, milk, and black pepper in a bowl, then stir in the grated cheese.
- 6Pour the filling into the crust and bake for 25–30 minutes until golden and just set in the center.
- 7Let the pie rest for at least 10 minutes before slicing.
- 8Sprinkle with chives before serving, if using.

- • Use a cheese with strong flavor; it keeps the filling rich without needing extra salt.
- • Bake on a lower oven rack if you want a crisper base.
- • Serve with salad, pickled onions, or a spoonful of sour cream.
